Did I Become a Cat Lady?

I mean, it was bound to happen. A single gal in her (late) twenties....

My main squeeze
But in my defense, my "cat" is the most ADORABLE PUPPY EVER!

Some more proof of my singlehood?

Leftovers transformed?

Yes, it's a sandwich. A delicious "pulled pork" sandwich. But the reason this delicious concoction came into fruition? Singlehood! It's hard to cook for one - and so that means that I usually cook a few servings of whatever I fancy at a particular time, and then enjoy it several more times that week. It inevitably gets a little repetitive and so I'm forced to come up with new recipes to overcome my dilemma ;)

Last piece of evidence? Last night? Me in my living room, pajamas on, watching Eat Pray Love. My dinner of choice? A plate of cheese, some sliced pickles, some left over sweet potato fries (from lunch) and a glass of wine.

It's a rough life I tell ya!

Pork ecstasy

P.S. - my "pulled pork" recipe? So easy! I just boiled some leftover pork loin in a sauce pan, covered with water, added some apple cider vinegar and bbq sauce and let boil for an hour. Then just pulled the pork out and shredded it with a pair of forks. Voila! (I added a TBSP or 2 extra of BBQ sauce after shredding...I like it saucy!)

Ahoy!

I'm dressed like a sailor today.

A sailor who likes pink.

And likes to cross one leg over the other.

It's a [sailor]'s life for me.

My Mother is Amazing

Really. She is. She is an amazing artist, the best cook I've ever encountered, a great business woman, and a phenomenal horsewoman. She also knows how to knock back a glass of wine like nobody's business. My stepdad is a very lucky man ;)

Recently, I called my mom in a panic. Well, a panic for me. "Mom, I have a pork loin that I need to cook. Adam's on his way over. How do I cook? Like now?" Without skipping a beat my mom instructed on how to make the juiciest, flavorful, drool-worthy pork loin ever. And it took 30 minutes. Sorry Charlie Sheen, but this is "winning."

Just so you know, I've made this two times in the past week. It's that good.

Here are a few pictures...

Rosemary, Garlic, Hungarian Paprika, Salt, Pepper

With a few swigs of olive oil

Thank mom!

Spring Has Sprung

At least inside my house it has.

Pardon the dust...

There. Much better.
Go buy some flowers. Guaranteed to put a smile on your face.

It Was a Dark and Stormy Day....Part 2

Just to really get my point across, I decided to take a few pictures of the gloominess outside.

View from my office (Little Italy)

View pt. 2 (This is the San Diego Bay)

I just walked out to the main room, snapped a few pictures, and walked back to my office. My co-workers think I'm crazy.

I guess it's not soooo gloomy, but it is getting darker by the moment. And the sun is definitely nowhere to be seen. Sighhhhhh.

P.S. I am working, I'm on a conference call that I'm minimally involved in (just have to be present). Thank goodness for bluetooth!

It Was a Dark and Stormy Day....

Lest you think I'm joking when I say I like a lot of mustard in my vinaigrettes...

Mustardy

Yesterday's concoction was a variation on a theme. Instead of using regular dijon mustard, I opted for dijon with horseradish. I also added some sliced green onions. It was "kicky." I LOVED it.

All mixed up, it went perfectly with my mixed veggie salad. (Still not digging the dark green leafy stuff...so weird) I also had some spaghetti and garlic bread that Adam slaved away making. Yum.

Eat your veggies!

I know I'm not the first to notice this, but how much does cut cauliflower resemble a brain?

Cauliflower braaaaaain

Anyone? Anyone at all? Am I crazy? That's cool....

And lastly, because I'm trying to "pull myself together" (thanks Dianne), I've committed to wearing makeup and wearing semi-nice clothes to work from now on.

Awkward Bathroom Shot

Extreme Close Up!

It's raining today in San Diego. Not loving that. But I am enjoying the way the water looks so dark gray and choppy. It's very dramatic. And I love dramatic ;)

It's supposed to rain through Saturday. I had hoped to make it a beach weekend. We'll see. Keep your fingers crossed! In the meantime, I'm going to cozy up with my coffee and hunker down and get some work done. Although I really wish I was at home, bundled up on the couch watching girly movies. Oh well...

Yep. I'm Doing Okay.

Clean hair. Make up on. Dressed like a ballerina. I am pulled together?

I also had a diet coke for breakfast. Whatever that means.

And despite the yucky overcast weather. I'm feeling good.

Adam made spaghetti last night. That was also good.

I'm rambling today.
